Bacon & Cheese Cauliflower Mash

This was my 2nd attempt at cauliflower mash and this time it was WAY better! Still not edible though 🙁

Not by me at least…

What I Did:

  1. I boiled the cauliflower in chicken stock till it was extremely soft.
  2. I then added the boiled cauliflower to the food processor and added heavy cream, green onions, cheese and bacon.
  3. I gave it a grind and got a smooth puree.

Like I said above, it tasted a lot better then my first attempt but I personally CANNOT get over the cauliflower taste. Boiling it in chicken stock is definitely the way to go if you like it though. Also, I wouldn’t add heavy cream next time unless I feel it needs it, so after I grind it and test consistency.
