If you’ve been following my Keto blog for lately you know I’ve been having trouble with Keto Recipes, specifically Zucchini smh THAT’s all over now!
Sauteed Zucchini! No idea why I never thought of it before lol.
- Sliced and diced top of some paper towels and plate. Added salt to drain the water and then I found some Roasted Potato seasoning and added that as well.
- You can see the wet paper towels from the water drainage. This is after about 1.5 hrs – I was doing other stuff, i wasn’t really waiting but it worked out.
- I sprayed the pan with a little bit of oil and threw them in. The seasoning added to the browning so that was good! I like’em a little burnt but the longer I cooked them the softer they got which I don’t like.
- Ready to eat with roasted chicken breast drowned in its own juices plus some chicken skin. It was really good!
The seasoning I used for the zucchini and the seasoning the wife used for the chicken are very similar so the flavor was a bit strong sometimes. Next time I’ll leave it with just salt and pepper… maybe cook it in butter at higher heat.
Also gonna try them grilled. ALSO gonna try them sliced super thin in lasagna.
