Last night’s dinner was going to be a tasty cheese roll up filled with turkey, bacon, spinach and mayo. I usually make them with mild cheddar cheese – which I thought I had but I didn’t. I figured Monterrey Jack & Cheddar would do just fine – not so much.
It melted fine, but it didn’t harden like the mild cheddar usually does. Then I tasted it with some turkey and it just didn’t go well together – at least for me.
I ended up rolling up some bacon and it was glorious!
I ate it with avocado (instead of spinach) and sliced turkey.
