Made these last night and OMFG these were good!

I’d like to thank T1D and Gluten Free and The Keto Show for getting the ball rolling but what I just did is going to blow your mind… Hopefully :)

The original recipes called for almond flour mixed with melted butter for the crust… Almond flour is just grounded almonds right?!? Walmart has these strawberry flavored almonds right… Oh yeah, I went there!

Ingredients: (Makes 6 cupcakes)

  • Almond Flour (like 3 tsp) If you don’t want to use strawberry almonds, use ¼ cup almond flour
  • Strawberry Almonds (1 serving/24 nuts)
  • Cream Cheese (8 oz)
  • Egg (1)
  • Unsalted Butter  (2 tbsp)
  • Vanilla Extract (1 tsp)
  • Liquid Sweetener  (10 tsp)  I use Nevella – Sucralose to Go

Directions: (What I did)

Crust

I used a magic bullet to ground up 24 strawberry almonds. It left a few whole/half almond but most of it was fine. I mixed in the melted butter and it seemed too watery for me so I added some regular almond flour to get it thicker. Then I also removed most of the whole/half almonds. This smelled and TASTED great! I poured it out over 6 cupcake liners and put it in a preheated oven at 350 for 2 minutes. After I took them out I started working on the filling.

Filling

I used my magic bullet to mix this and had some trouble but where there’s a will there’s a way to get Cheesecake!

I combined the block of cream cheese, egg, vanilla and liquid sweetener. I should have soften the cream cheese first. I had to change blades and put it in the microwave for 30 seconds. After that, the magic bullet did its MAGIC. Now, THAT smelled and TASTED great! Filled up the 6 cupcakes with the crust on the bottom and put it in the over for about 14 minutes. I took them out and let them cool before putting them in the fridge to eat them today. I couldn’t wait. I had one and it was so GOOD. Then I had one today and OMFG they were better! Seriously, a “diet” shouldn’t taste this good!
