Tasted just like the lasagna I make but I didn’t have to boil the chicken and shred it 🙂 – just cooked in a pan with some butter and seasoning.

I didn’t think the 6 cups were going to be enough food but it filled me up! Prolly used ¾ chicken breast since I ate ¼ before I decided what to do with it lol

Layers:

  • 2 pepperoni slices folded to make a little boat (next time I’m going to try 3)
  • some ricotta cheese (I only used ¼ cup for all 6 cups)
  • some shredded mozzarella cheese
  • some chicken
  • come more shredded mozzarella cheese
  • some low carb marinara sauce

I baked it at 400 for about 15 min… next time I’m going to try baking or broiling the pepperoni by itself at first so it can get hard/crispy at the bottom… and maybe add some shredded mozzarella cheese between the slices in the bottom so they can stick together more… hmmmmmmmm
